Mint cheesecake with truffle

235 g. cream cheese
170 g. Mint ice cream
85 g. sugar
5 gelatin sheets
170 ml hot cream
Melted dark chocolate
Truffle Cake Cupcakes by Dulcesol
For the base: crush the Truffle Cake cupcakes Dulcesol, place at the base of some serving rings covered with baking paper and reserve in the fridge.
For the cheesecake: mix the cream cheese with the ice cream and the sugar, add the cream with the gelatin and beat again. Pour over the base of bars and chill for at least 2 hours.
Hydrate the gelatin sheets in cold water for 10 minutes. After time, drain and dilute in the hot cream.
For decoration: unmold and cover with a little melted chocolate, a portion of Truffle Cake cupcakes from Dulcesol and chocolate shavings.
