INGREDIENTS

1 slice of traditional loaf bread

1 u. egg

1 u. tomatoes

¼ u. purple Onion

Fresh coriander

Lime juice

Salt

Olive oil

½ u. avocado

creme fraiche Cheese

Hot red sauce

PREPARATION

Cut a few circles from the bread slice with the help of a metal ring. Crush with a rolling pin and toast in the oven at 180ºC for 10 minutes.

Peel and chop the tomato into small cubes and mix with the chopped red onion and the chopped fresh coriander leaves. Dress with a little lime juice, oil and salt.

Fry an egg in a frying pan with plenty of oil, and place on the toasted bread circle.

Serve with the chopped tomato mixture, a few slices of avocado and a little spicy red sauce and creme fraiche.
