Tolosana pastry

Three generations already contemplate the Tolosana Pastry. It was the 20s of the last century when Mariano and Angeleta opened their first oven in the town of Almudévar, Huesca. There the locals came to bake their breads. Already in the 50s, the business expanded with its own elaboration, both tambourine and confectionery. Three decades later the evolution continues with the expansion of its range of products and with the birth of the star of the house, the Almudévar Braid.


Tolosana Pastry has grown over time and currently has a workshop and a store in Almudévar, another in Huesca capital and three more in the city of Zaragoza. Its multiple locations with easy access make it easy to buy your sweets in the Autonomous Community of Aragon.
In addition, they offer a sales service through the internet and some of their preparations are found in the main shopping centers throughout the country. It is difficult not to be tempted.

The philosophy of the place is based on the purest tradition. Over the years they have been recovering almost forgotten products, adapting them to the tastes of current customers. Thus we find the cake of San Antón whose history dates back to 1676 and which is made from a bread dough that is flavored with traditional Aragon spices such as cinnamon and anise beans; the donut of San Blas with austere decoration and tasty pastry; the Moño cakes, enriched with eggs and oil; or the empadanicos of pumpkin and apple, typical of Christmas.
The wide assortment of this pastry also includes more well-known sweets such as bones of saint, buñuelos, guirlache, coca de San Juan, yolk ribs, torrijas or fried milk.

In addition, good breads and some savory recipes such as sardine cake, which was formerly consumed in the Lenten season, when meat could not be eaten and was replaced by humble and delicious fish.

But as we have said, the great specialty of Tolosana is the Almudévar Braid. It is made from a sourdough with many years of life. A long fermentation coupled with the aroma of butter give rise to a perfect puff pastry. When tasting it, the crunchy texture of the icing that covers it is surprising, giving way to a tender creaminess inside with hints of caramelized nuts in the oven. A marvel that we can get practically anywhere in Spain and that no one should miss.
